Patience is key in our kitchen. We believe in a long ferment, letting our dough rest for two days in the fridge. This develops complex, nutty notes and ensures an incredibly light crust. When it's time, we use the traditional 'schiaffo' or 'slap' technique to stretch the dough, moving air to the edges to create that signature puffy cornicione.

Minimalist perfection: oil & basil

We treat every ingredient like royalty. After the flash bake, a simple drizzle of high-quality extra virgin olive oil and a few fresh basil leaves are added.
